A Night at The Parkview: Fine Dining, Cocktails, and a View of Burnham Park
The Parkview Restaurant and Lounge opens today bringing a fine dining restaurant and lounge bar that manages to be distinctly modern and uniquely Baguio at the same time. Located in the Venus Parkview Hotel, this restaurant is also a top shelf cocktail bar.

New Restaurant and Cocktail Lounge
The newest restaurant in Baguio is a testament to the vision of Venus Parkview Hotel CEO Isabelle Barter, and executive chef George Waytan, upscaling the nightlife options on Kisad Road to include a fine dining and high end cocktail lounge overlooking the expanse of Burnham Park.
The walls are a deep dark sea green with art deco mouldings, adorned with rotation of pieces from the best baguio artists. The launch is headlined by the Mighty Bhutan’s mixed media offerings and kokodama balls from Ma’am Tetchie. All the elegant furnishings are export quality produced here in the Philippines, softly highlighting the massive 5 metre long central table from a single piece of acacia, comfortably seating thirteen guests.

Chef George’s menu exquisitely balances the traditions and history of the Venus Parkview Hotel, the Cordilleran cuisine and the culinary attention I’ve seen in BGC, Singapore and Sydney. This is Baguio fine dining. The menu had a phrase “From the Cordillera: Remembered & Reinvented” and every bite we tried on the sample menus were surprising and transportative. From appetizers like the Kordibap (a local twist on kimbap), the signature Tatay Pilo’s Bao Bites (pata tim), and the yacon, watermelon and feta salad to the roasted bone marrow and prime rib eye. Although I want to gush about the texture of the Cordillera Pinuneg Chicken Roulade, or the flavour depth within baked miso salmon belly, I would run out of superlatives for the spiced strawberry glazed kiniing, which was pure smokey magic pared with the mashed gabi.

Top Shelf Cocktails in Baguio City
As the night progresses and the plates are cleared away ,the lights lower and the dj comes alive with low-key tracks that you can still converse over, transforming this fine dining restaurant into a true cocktail lounge.
With the brightly lit spirits wall behind them Gray, Marc, and the bartenders are handmixing cocktails to order. Using local flavours such as freshly muddled calamansi in the mojito and top shelf spirits to make unique drinks like their strawberry negronis and spicy mezcal sours. Small details are everything in this Baguio cocktail bar, the ice cubes are frozen in a secret method leaving them crystal clear and whiskeys served in aerating rotating glasses. You can sit at the bar and watch the cocktail shaker’s shake, peer through the pass-thru into the kitchen . I chose to sit out on the verandah overlooking the park for the cool night air and Baguio feels, sipping a mai tai while listening to the soft music in the low light and looking towards the brightly lit ferris wheel.
The Parkview Restaurant & Lounge is located at 19 Kisad Road, inside the Venus Parkview Hotel.
The official opening ceremony is midday today, 12.12.2025 and open to the public from 5pm.
